The focus in this class will be to learn how to temper chocolate and what you can do with it once tempered. You will go away with 30-40 chocolates in 3-4 different flavours and the knowledge of different skills and techniques that can be used in chocolate making. You will also be given a copy of all the recipes used.

In this class we will cover the following:
- tempering chocolate like the pros for the perfect snap and quick drying
- creating your own chocolate truffle shells that we will fill with ganache and close.
- easy, quick and delicious chocolate bites
- Working with ready made truffle shells so you can see the difference in the two techniques.
- making flavoured ganaches for the chocolate truffle fillings
- setting up and using a bain marie and ice bath for tempering
- different decoration techniques for the chocolates made
